Aspiring Bakers Last Theme - Rainbow and Ombre Party!

If you have not read my previous announcement, YES, Aspiring Bakers is ending this month. Let's not be sad. We want to end our last theme with the HAPPIEST food on Earth - Rainbow and Ombre Party!

We welcome any bakes/desserts that are rainbow or ombre (with at least 4 colours). Cookies, cakepops, cakes, tarts, cheesecakes, pushpops, jellies, agar agar are all good, anything that you can think of! Sounds good?

If you have been waiting to try but still procrastinating, this is it! Make it once and you will be addicted. If you have no ideas or inspiration, check our our host's blog - She has plenty of recipes and tutorials to get you started.

Goodbye 2013 Hello 2014 & New Announcements

Welcome to 2014! Looking back at previous years, I don't seem to have the habit of compiling my bakes of the year. After seeing many bloggers doing it, I did mine this year.

Took a morning to look back at my posts last year, not many actually :P. I did my first charity bake sale for CNY, baked MORE chiffon cakes, did more kiddy bakes, played with fondant the first time, made mooncakes. I posted more unrelated to baking stuffs, haha! About gardening and half-way through my Hong Kong trip. Still have not posted up some bakes yet.

Some of my favourites for last year.


I'm not a very hardworking baker and blogger. I don't write well, I take my photos in less than a minute. I don't bake that often. I take longer time to blog, especially when there are more ways of sharing my bakes online, like through facebook and instagram. :) I choose to blog more casually now, at my own pace. Blogging is my way of recording my own recipes, my thoughts, my life, my experiences. So that I can have great memories when I look back. If I have shared a good recipe, inspired you to bake, provided some useful information, that's a bonus! :)

Good things come and go. I have 2 announcements to make today.

Aspiring Bakers is coming to an end this year. This had been on my mind for the longest time since last year as I think I have not done a good job. It is a hard decision to end AB. And I finally decide and officially announce it today. I hope you are reading this! This month's 39th theme: CNY Rock & Roll is the second last one. The last theme will be Rainbow Cakes/Ombre Cakes hosted by Cynthia. I really enjoyed the food posted by all bloggers and readers. Aspiring Bakers has great moments, bringing everyone together to share and make friends. I am very proud to be the starter of this event. Hope all of you will give great support for the last 2 themes. :)

The other announcement is about my online shop SSB Baking Supplies. It was started a few months ago, selling baking/cooking/packaging products. Thank you to all my baking friends who supported by buying and sharing about it online. I hope to look for more interesting products that are harder to find here and keep the prices affordable (some shops are selling too high!). Earning a little extra income and also fulfilling my little dream at the same time. Please support to keep it going!

Aspiring Bakers: 咖哩马铃薯包

其实很久以前就想再做一做包子。可是就是一拖再拖。终于拖到Aspiring Bakers找到理由找不到借口,开始了第一次包包子的经验。

我是不做豆沙包莲蓉包一般容易买得到的包子的。不然会被讲,这么容易买得到,做来浪费时间。;p 所以就选了咖哩马铃薯包。


No more excuse for not making baos, I finally tried making my first wrapped baos. I didn't put much filling cos I'm not sure if I can wrap properly. Actually it means, if I put too much filling, I dunno how to wrap, haha! Ok, will be better next time.


For the bao skin I use 孟老师 two-time proofing method. Actually, a lot of people like to use 孟老师 recipes. But I find that her bao skin recipe is quite tasteless. But I like the simple recipe, may not the best, probably also have to increase the sugar if you want to use.

Curry Potato Buns 咖哩马铃薯包 (two-time proofing method)

Fillings: (my anyhow cook method)

1 Potato, diced
1 stalk curry leaf (my homegrown)
1 tsp curry powder (more if you like)
1/2 tsp salt
1 tsp light soy sauce
1/2 tsp sugar
1 hardboiled egg, diced

1. Steam or deep fry potatoes until cooked (deep fry nicer, steam healthier).
2. In a frying pan, put 1 tsp oil, fry curry leaf until fragrant.
3. Add in potatoes, curry powder, stir-fry a while.
4. Add in some water and seasoning, cook until dry. Set aside to cool. Mix with eggs.

Dough ingredients (8 pcs):

(A)
165g water
1/2 tsp instant yeast
200g plain flour

(B)
100g plain flour
10g sugar
1 tsp oil

Method:

1. Mix (A) water, instant yeast and flour. Cover in cling wrap and proof for 1 hour.
2. Mix (A) from step 1 with (B) and knead to form a smooth dough. Cover and rest the dough for 5 minutes.
3. Roll the dough into cylinder shape, divide into 8 equal pieces.
4. Place the dough, cut side up, press flat and roll into flat disc using rolling pin, make the outer side thinner.
5. Wrap the buns with fillings.
6. Put the buns on baking paper and into the steamer (heat off). Cover and proof for 15 minutes.
7. On the fire, when the water starts boiling and steam on medium-high heat for 12 minutes.
8. Off the heat, leave the lid slightly open for 3-5 minutes before removing the whole cover.

I am submitting 咖哩马铃薯包 to Aspiring Bakers #31: Bao Ho-Chiak 包好吃 (May 2013) hosted by Miss B of Everybody Eats Well in Flanders.

There is a series of bao-making videos by 孟老师 on YouTube. You can search 白色20變. Here I added a video for making wrapped buns. I think it is still better to learn making baos from a video, especially the wrapping part. The rest is just more practice!
